Strawberry Smoothie Popsicles

Strawberry season is here again and I love these little beauties! They're fresh, juicy, tart, sweet and extremely photogenic. Just look at 'em. Don't you want to cram a dozen in your mouth right now?

The best way to enjoy them is also the simplest - wash them, grab hold of the stem and take a big bite! But when you are in a mood for something a little more involved try this recipe. It puts a fun twist on what is essentially a breakfast item and takes it effortlessly from day to night. It makes for a refreshing and guilt free dessert.

Now, this being a food blog, I kind of feel obliged to call it a 'recipe' but its more of an idea. Just a few ingredients of your choice thrown together in proportions that suit your taste and you're done! Here's how I do it. To make one tall glass of strawberry yogurt smoothie you'll need

Special equipment (optional)


If you don't have one it doesn't matter. Any plastic or steel cup will do. Pour the liquid in and freeze. When it has firmed up a bit, carefully insert an ice cream stick or even a small spoon into the glass and let it chill all the way through.

Method

Roughly chop 4 to 5 strawberries and 1 banana. In a blender (or a deep bowl if you're using a stick blender) add half a cup of yogurt, half a cup of orange juice and a tablespoon of honey. Dump the fruits in and blend. That's it! I prefer my smoothie to be tart and less sweet. If you prefer it sweeter you can try one or all of the following - reduce the amount if yogurt, increase the amount of honey , use a sweeter juice in place of orange or even milk if you like.

What I'm trying to say is, make this recipe your own. Add as much or as little of the ingredients you want, change the fruit and you'll still end up with a great result.


At this stage if you just want to drink this stuff and not bother with those pesky moulds then go ahead! My smoothie almost didn't make it to the freezer. 

Pour the smoothie into the moulds and freeze for at least 6 hours or overnight. When you're ready to eat them, hold the moulds under running water or place them in a wide bowl filled with water for a few minutes and the popsicles should slide right out!
